Ingredients

  • 1/2 cup cooked butternut squash
  • 1/4 cup full fat organic coconut milk
  • 1 pinch salt, 1/2 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 large apple
  • 1 tbsp toasted coconut

Instructions

  1. Grate the whole apple without peeling.
  2. Add the apple, butternut squash, coconut milk, salt and spices to a food processor.
  3. Blend until smooth for about a minute.
  4. In a saucepan add the blended mixture and bring to a simmer, stirring occasionally.
  5. Cook for about 10 minutes.
  6. Serve warm and top with about a tablespoon of toasted coconut for each serving.
