Grated Egg + Avocado Toast

Ingredients

  • 4 hard boiled eggs, peeled and grated/diced small
  • 1/4 cup crumbled cheese (optional)
  • 1 ripe avocado
  • 1/4 tsp ground cumin
  • 1 Tbsp fresh lime juice
  • 1 cup quartered fresh cherry tomatoes
  • 4 slices of rye or Ezekiel bread, lightly toasted
  • sea salt and freshly ground black pepper

Instructions

  1. In a small bowl smash the avocado with the back of a fork.
  2. Season with sea salt, pepper, and add in cumin and lime juice. Stir well to combine.
  3. Spread the avocado mixture equally over slices of bread, then top with grated eggs, crumbled cheese and cherry tomatoes.
  4. Season with a pinch of sea salt and freshly ground black pepper.
