Ingredients

  • 5 tablespoons unsalted butter
  • 1 1/2 pounds boiling potatoes, peeled and cut into 1/2-inch dice
  • 2 medium yellow onions, chopped
  • 2 teaspoons coarse Celtic sea salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Melt the butter in a large skillet over medium-low heat.
  2. Add potatoes, onions, salt and pepper and cook for 20-25 minutes, turning occasionally, until the potatoes are browned and the onion is caramelized.
  3. Take off the heat and season with salt and pepper if needed.
  4. Serve immediately.
